It all depends on your style. Most will leave Oct/Nov for down south and take the most direct route to save fuel money and time. For you that would be I5. Which leaves Arizona as your most likely state of choice.
You'll hear a lot of talk of Yuma, Apache Junction, Tucson, the foothills, and Quartzsite among snowbirds. Also right across the boarder is Laughlin, NV with casino's and RV parks. Palm Springs will be another one you'll hear about.
March/April will be the time most will start to head north. Starts to get hot, plus it's an odd feeling to watch everyone leave.
Everyone is different, we all like different things, and you'll find yours after a couple of years of snowbirding.
