The tire inflation requirement is based on the load the tire needs to carry. The sidewall of the tire just gives the maximum inflation and corresponding maximum load. If your tire will be loaded more lightly than this, then a lower inflation pressure is called for.
Tire companies have charts available for the pressure and loads. These are pretty much identical for the same tire size and type and load rating (that is, they don't vary appreciably between tire makers).
The door sticker is based on the assumption that you'll be carrying a full rated load, and is an appropriate pressure to use if you haven't or can't get your actual weights. Typical class C's are rarely a great deal under the maximum weight rating.
On my class C, the rears need 80 psi but the fronts are around 60-65 psi as the limit there is the axle rating. Having too much pressure in the front tires particularly can be somewhat troublesome for good handling. I would tend to avoid a shop that insists on putting the tire sidewall pressure in every tire regardless.
