Way back when... We had a 'Camper' it had two seats up front, a galley area and four bunks in the rear. Mom would cook while Dad drove. The Dash was a very large flat area, my brother sat there, I sat in the passenger seat. We ate going down the road. Today they'd lock us up! That said, I cut up hard cheese, a meat stick and some fruit, cantaloupe, melon, grapes and put them in snack size bags, these go in a small ice chest that sits next to me. Also a couple drinks, Monster, Ice Tea, Water. I'll graze while driving. This way I can go 4-6 hours w/o stopping. I don;t get tired as I have a steady stream of food. Everything can be eaten with one hand and anytime I am in heavy traffic, eating stops. I have thought about some sort of 'bowl holder' that I can dump one of my snack bags into. The baggies are a pain.
Now this said, I don't eat and would not recommend anything that is not 'bite-sized'. That allows one to eat one handed and not have to look to put anything down. It is in the bowl or your mouth. The water bottle goes into the cup holder. but that is an easy blind move.
If the OP is doing as I do, which I do to cover ground on a time limited trip I have no problem, if he is trying to eat a steak dinner or a bowl of soup, not so good.
