Check the accuracy of your guage. On my Chevy 3500 the guage read 20° hotter than the coolant actually was. I bought a good after market guage and it confirmed the problem.

Also add Royal Purple "Wetter Water" it's a great product and will help kepp your temps lower. It dropped mine by 20° on 6% grades.
