As much as we love Yellowstone there's no comparison for one more day in Yellowstone vs. going to Grand Teton Nat'l Park for a day or hopefully longer. They are both completely different in looks and the hiking is much better in the Tetons. Being right next to each other, definitely does pass up the Tetons.
Now, if referring to the town of Jackson, yes - you can skip that! :)
The town of Jackson is just like any other tourist town. Has its share of junk shops; its share of fine places to eat and its share of other types of shops (Jack Dennis fly fishing and Tom Mangleson's photo studio) as any other town has.
1 day to see the WHOLE town...and 1 day to view the valley itself.
