it appears you have water damage in the bed area and bathroom, typical of the older rv's. You will need to either pop the roof off or the ceiling to repair so its possible you will need to do the entire shell. If ya do add as much insulation as you can since the older models again did not have much to begin with. You got a handfull of work to begin with and if it meets your requirements then you can do the rebuild but its gonna take time. Cant tell ya where to start, the engine is 'running' now so you can do basics on it to see if it will continue. Add in an electric fuel pump as they are more reliable and easier to deal with for future problems. The gen I would basically leave alone until you decide what you want to do 1st. If its rebuild of the coach and you pull either outside skin or inside panels then you can rewire as needed then the genset becomes an issue IMO. I did not see an AC unit so that would also be something to think about as you build. There is always a guy on the local craigslist with AC units and actually generators for rv's. So that could be a possibility, but the ac's cannot be rebuilt and gensets are $$ to rebuild so maybe just new installs would be better. The wrecking yard over by TEP often has wrecked RV's that could be a parts source if needed for genset and AC unit? Just a thought.
Trailer life had articles withing the last year or so on installing ac units and even replacing the roof rubber caoting, again look at the website to read up. Also I beleive they talked about how to remove the outer skin on rvs for repair/rebuild. You tube has some also.
