OP here: I just double checked the units and they are less than half bubble off center. I showed DW what I need to do to try to improve the situation and she agreed it really isn't worth it. I will be the designated door holder.
The next time we setup on firm ground or pavement I will tip us half buble PS up and see it that helps.
Tried to use velcro to hold the doors open against the cabinet frame, but there is not enough overlap to get a reasonable grip :(
