Is this a diesel pusher model? If so, there's a very brief mention of how to drain the fresh water tank on pages 24-25 of the 1999 Coachmen Santara online manual, as well as a diagram of the water systems valves and what they do. Beyond that, I'm not familiar with your year/make/model, so maybe someone else can help?
