How well does it all work? Let you know this time next year! :)
The design goal was three days of full service (two adults, three hot meals, two showers, 65F interior temp) without engine start or sun. With 40 gallons of water, and using 150Ah per day, we can do it.
For longer autonomy, you cut back on showers, use a sleeping bag, etc. (I crossed the Sahara on under 20 gallons, so I know how to economize.)
If really out in the weeds, then you simply start the engine while running the stove or microwave, the minimum output of the alternators is 150A, and 30 minutes will recover most meal prep. As a practical matter, your trip into town would accomplish that easily.
The beast was finished in December, so most of our testing has been at or below the freezing mark. Will have to wait for our trip to Overland EXPO to see how things work in more temperate climates.
I would note that the truck has not been connected to shore power since before 12 Feb 2014. Granted, the water was drained and the heat turned off after the last trip, but normal winter sun is enough to bring the batteries to 100% every evening unless the snow is too deep. The biggest variable is heat, when the heater is on, it consumes more battery for the fan and, of course, diesel to heat the water and air. The most urgent needs have been to dump grey water as the tank is only 25 gallons.
The truck does have a shore power cable and a 2800w Magnum Inverter/Charger - the no-shore-power criterium was simply to avoid having to carry a heavy transformer when overseas. In the States we simply ask for a tent space.
But basically, there is no magic, just a lot of solar and a pair of 125A alternators.
