Yeah, I've definitely seen Dodge vans with the two rear doors, maybe even on the 1500 as well. In fact, around 1995 I rented a regular length Dodge cargo van that I'm pretty sure had the two rear doors. But for work, when we had to rent a 15 passenger van, back in the 1990s, it was often a Dodge extended van and it always had the larger single door. Not sure if you could have ordered the extended van with two rear doors, but the rental company always ordered with one door. I think it also gave you a rear window defroster with the single door, which came in handy in colder temperatures when you have a lot of passengers breathing and fogging up the windows. It seems only Dodge had the option of the large single rear door. I've never seen a Ford or Chevy full size with a single rear door, always the two rear doors.
I kind of like having the two rear doors so it doesn't matter what side of the road you're parked on (since you could be parked on left side on a one-way street). No worries about the door being hinged on the wrong side. Having the two smaller rear doors makes it equally easy no matter what size of the road you're parked on, or if you're parked next to a fence, building, tree, etc. Although you have to open the right side door first. The only thing better is the swing up liftgate hatch that most minvans and SUVs have.
