Indirect heating.......coals banked on both sides with a drip pan in center under turkey
Venting set to hold 350*F----bottom vent wide open, top vent about 1/2 open
Takes about 4- 4 1/2 hours for a 15lbr.
Add a few coals about 2 hrs in
Done it a couple of times......tent with aluminum foil after about 30 mins. or leave untented for a very crisp skin.
Check thigh meat with thermometer.....165*F then take off grill and let rest 20-30 mins.
