best brisket in Texas

Last Friday the personal assistant was sent out of the all day state licensing meeting at 1030 to get bbq lunches for the board in Austin Texas. Sent to Franklin's BBQ. The place opened up at 1100 and the line was already a block long with many people having prepared ahead by bringing folding chairs. Seating for new entrant to the line was at 230. Without pulling off the road, I searched for a Popeye chicken.
Getting background info from internet, there is a cult that believes Franklin is the best in the country, that justifies a 3 hour wait for lunch any day of the week for brisket....Sorry.....any establishment that makes its customers wait that long is guilty of abuse,, that cannot be countered by secret seasonings.
Great brisket is available in Lockhart (Blackies, Smitties) and Luling(Market), and many other restaurants in and around Austin.

  • Anyone that can't find good BBQ in Austin needs to get out more. Getting into Franklin however is never a slam dunk to get in unless you have all afternoon.
  • Franklins really does have a cult following. Did you know they give you free beer while you wait?

    There is lots of good brisket in Texas. What separates the real good from the good is the trimmings, beans, tater salad, cole slaw.

    We BBQ a lot and cook for groups on occasion, so, we are partial to our own stuff.

    I agree. I haven't found a brisket or steak anywhere that is better than what I pull off the smoker or grill.

    The entire time I'm thinking I can do better than this. It almost ruins the meal.
  • I'm in for not waiting in line No 3 hrs! I'd starve to death by then! Been to several BBQ's around Austin that I thought were pretty good, without waiting 3 hrs!

    I don't think they were making anyone wait, The wait was by choice.

  • You have that kind of craziness everywhere. It goes on in Florida as well with seafood. I'm sorry, there are way too many good seafood places to get me to stand in line that long so you can claim some mythical title.

    Agreed....We have had brisket and sausage from all three you mention and IMO Market in Luling is about the best there is.
