Breakfast porridge stew

1.5 C water
dash salt (optional, but it makes a difference)
.75 C old fashioned oats
2 small or 1 large eating apple, cored & hacked into bite-sized bits (peeling optional)
2 little boxes (.5 C) raisins
1 can peaches in water or lite syrup, drained well
.5 tsp cinnamon
sugar or brown sugar to taste

Put water, apples and salt in a med. saucepan, heat to boiling.

Boil apples for about 3 minutes.

Add oats and raisins, cook for 5 minutes uncovered, stirring every now and then. Don't let it burn!

Set aside uncovered. Stir in peaches and cinnamon while it cools.

Serve with sugar or Splenda (Granulated or Brown, but I don't recommend the little packets with this) to taste. Milk or cream on the side.

The fruit adds yummy bulk for hearty eaters. You could serve with sausage if you wanted a nice contrast, but there's lots of protein in the oats.

(We remove the stems and seeds and feed the apple cores to our dogs. Don't let them have the finished product as the raisins are a Very Bad Idea.)

  • You can cook it overnight by adding the appropriate amount of boiling water to it in a thermos. It will be done by morning. This includes Irish oats as well.

    My daughter makes this in a crockpot. She and her little ones love it.. I thought the oats were cooked to long.

    I guess try it and see.

    Just curious. Is there any food value in sausage?
    My grandma used to say it was good for ones complection and rubbing it in my hair would keep me from going bald. ...:)

  • That sounds great. I'm a big fan of oatmeal, as long as it isn't instant or quick.
    Sounds a little like my morning oats. I actually make containers with everything but the cinnamon up ahead and have them ready.
    Mine is:
    1/4 cup thick rolled oats
    1 tbsp dried cranberries
    1 tbsp dried blueberries
    1 tbsp dried diced apples
    1 tbsp chopped pecans
    1 tsp brown sugar
    1/2 tsp salt
    I put it into 1/2 cup of water with a good dash of cinnamon for about 5 minutes, then turn on the heat and and boil for 5 minutes.
