There is no specific recipe it is simply a way of using up whatever vegetables you have left from dinner the night before.
Mashed potatoes is the glue to hold it together.
Large cast iron skillet
Saute some chopped onion in butter until translucent (about 3 minutes)
Form the left over vegetables and mashed potatoes into small patties
Turn up the heat a bit...fry the patties for about 10-12 mins. until heated thru and slight crisp edges (turn a few times to evenly heat thru)
Left over vegetables.......cabbage, carrots, peas, Brussels Sprouts, green beans finely chopped
Makes for a great breakfast...fried egg on top.
Drizzle with a little syrup, hot sauce or ketchup
