Butterscotch sauce
4 tbsp salted butter
1 cup packed light brown sugar
1/2 cup heavy cream
1/2 tsp vanilla extract
In a wide saucepan or skillet, melt butter, brown sugar and 1/4 cup of the cream, stirring until smooth.
Without stirring, let the mixture cook at a bubbling simmer for three minutes.
Remove from heat and stir in remaining cream. Let cool a bit and stir in the vanilla extract.
(I have not yet tried this.....let me know how it worked out for you.)
