Thanks for all the replies and the links.
While the oven rack idea seems a good one it is not feasible for me as I need to cook on flame for some things. Coals are fine for the slow method. Also the wire oven racks will I fear soften and sag under the heat and weight.
I was looking for the Cast Iron type of Chuck Wagon equipment that can take repeated high temp heatings, be used over flame, and will take the weight of cast iron cookware. The Black Bear Forge stuff is exactly the type of stuff I mean...(thanks)

Any posts with more links to Mfg's or experience with specific brands would be appreciated.
