I keep my past menus as well. Does make life easier in a lot of different ways.
As things stand I just finished doing my prep for a 4 night trip to view the Perseid meteor shower. Here's what the current menu looks like:
Day1
Breakfast
Lunch
Dinner:
starter- roasted clams/mussels/oysters
main- grilled fish tacos + slaw
Day 2
Breakfast: fruit platter, egg muffins, coffee, tea, OJ
Lunch
Dinner:
starter- olive and feta salad
main- Grilled Dukkah lamb rib chops, ratatouille, quinoa
dessert- citrus shortcake with berries and yoghurt
Day 3
Breakfast: fruit, dried meats and cheese assortment, coffee, tea, OJ
Lunch
Dinner:
starter- sun dried tomato hummus and crudites
main- chicken Shawarma on w/w pita topped w/ tabbouleh, tomato relish and yoghurt cuke sauce
dessert- lemon sorbet
Day 4
Breakfast: eggs poached in tomato sauce w/ ratatouille, hard roll, coffee, tea, OJ
Lunch:
Dinner:
starter- tomato tartare
main- Porterhouse steak, grilled vegetables
dessert- creme brulee
Day 5
breakfast: leftover omelette, home fries, OJ, coffee, tea
This trip we'll be doing a bit of hiking which explains the lack of lunch; we'll eat on the road.
I do hope I've used the cooler's ingredients enough that I won't have enough for the leftover omelette the last morning. I really wanna stop at the Mexican food trucks at Exit 46 on I-95 and eat their offerings;).
