camping menus

Why is it that every time we plan to go camping and I have to come up with meals, I draw a blank.

DH says "how about making a book of menus and we can choose from it." Now I'm scouring through my numerous cookbooks finding suitable recipes.

Then I remembered you! Send some of your favorite camping meals. If we get enough, who knows we could publish our first camping forum cookbook. :B

    We also like to wait and shop for food after we reach our destination. While in Wisconsin we found the best sausages and cheeses. In the gulf coast area wonderful fish and seafood. We cook our meals just like in a stick and brick kitchen. I even use my oven.
  • One thing that is always on our camping menu (every single trip) is pizza on the grill. Usually we get naan bread or one of the other premade crusts and do garlic, fresh mozzarella, fresh tomatoes and fresh basil. Sometimes we add leftover chicken, pesto or mushrooms to the toppings. It does tend to get comments from our camping neighbors.

    I write all my menus for a trip down on a Word document along with my shopping list to make those items. After a couple of trips, I just start consulting my saved copies of previous menus. If I was real lazy, I could just print the menu from a trip but I usually steal a few things from each trip menu to make a new one.

  • We just make our usual stuff we make at home depending on our mood: much of it is in a dutch oven over the fire. We'll double the recipes and eat leftovers heated in the microwave. Our recipes are simple and let us spend less time prepping and more time eating and exploring. We also get a lot of fresh ingredients at farm stands.

  • my DW and a friend of ours would make casseroles before hand and we just had to heat them up. Hamburgers, even sandwiches for lunch.
  • BBQ Ribs in crock pot, cook ahead. Baked beans, corn on cob.
    Pasta and sauce cooked ahead of time (any flavors)
    Fajitas with Mexican rice.
    Goulash (any recipe). We made it camping in girl scouts. Hamburger, onion, tomatoes and vegetable beef soup. Better if made ahead of time.
    Anything grilled: hamburgers, hot dogs, chicken, steak, pork loin chops.
    Pasta salad made ahead if you have refrigeration. If not, cook the pasta and assemble at campsite.
    Soup or chili in cooler weather.
    Meatball sandwiches. Put meatballs and sauce in crock pot, buy rolls and provolone cheese. Serve with chips or salad.
  • I try to come up with easy stuff, and some things that can be made before a trip... Chili is #1 I make prior since it is always better heated up. Pulled pork sandwiches are always yummy. I also do stuff so DH can share the duties, and he loves grilling. Burgers, BBQ Chicken. I make stir fry, breakfast on the grill, fish in foil, steak, baked potatoes zapped and then grilled. Lots of comfort food. Food just seems to taste better away from home. Sorry nothing spectacular on our menu but we like simple foods.
    Very curious for other responses... Always looking for new ideas.
