Cast Iron Chef: Blue Cheese & Bacon Stuffed Mushrooms

Question

I sautéed the mushrooms first then proceeded with the recipe to avoid the excess liquid. They were good. Definitely use a good quality blue cheese. I can see these being smoked also.
