Ceviche

We had the best ceviche last night in a little cafe in near the Pacific in Costa Rica. I've tried making it but it was never this good.

Fresh white fish , diced (ours was snapper)
Fresh lime juice
Splash of Ginger ale
Fresh cilantro and minced onion
Salt to taste

  • little marisco hole in the wall near me has some of the best ceviche

    white fish (or shrimp) I'm not fond of the mixta (don't like octopus)
    tomatoes
    onion
    cilantro
    **cucumber - love the addition of the cuke
    lime juice
    topped with sliced avocado

    I squeeze some lemon on it, drizzle tapatio and dig in!!!

    mmmm .... I know what I'm having for lunch today!!
  • Mexican neighbor would put avocado in his and I thought it was a nice add.
  • I grew up eating escoveitch and when I discovered ceviche it was instant LOVE! One of my criteria for a retirement locale is lots and lots of fresh fish:).
  • A couple years ago, I was on a fishing boat in Puerto Penasco and the crew made ceviche right on the boat with the fish we caught. Yum!
