Yes, I know you can get a cooked bird at Costco or many grocery stores. That's fine, but you really don't know what chemicals or preservatives have been used to prepare it. I'm also aware that many doen't really give a hoot about such things, and that is fine. You also have to heat that bird up once you get home, so you are still dirtying a pot or something to do that, unless you nuke it, which I really don't care for re-heated meat out of the microwave.
That said, I'm going to try with my dutch oven on the stovetop. I've seen another recipe that uses the same pot in the oven - the two things they point out is to use a trivet in the bottom, make sure the bird is dry, and cook in the oven uncovered. I guess doing the bird on the stovetop, the dryness doesn't matter as much, nor getting it off the bottom of the pot? Or would it still be good to use my trivet?
