Cracker Barrel Fried Apples for Thanksgiving?

I've only eaten at a Cracker Barrel twice in my life........both times I had the pleasure of having their Fried Apple side dish.......

I had forgotten how much I liked this dish until last weekend when for the second time I got to eat again at a Cracker Barrel, this time at the one in Buckeye, AZ just outside of Phoenix, AZ......


I knew I had to search out a recipe to add this to our Thanksgiving table......the first one I tried I think hit's the nail on the head pretty close.......


2 cups apple juice, plus
½ cup apple juice
4 large golden delicious apples, with peel,cut 1/2 inch wedges
3 tablespoons cornstarch
1 teaspoon apple pie spice
4 tablespoons sugar

In a medium skillet, combine the 2 cups apple juice and sliced apples.
Simmer gently until apples are fork tender but not mushy, turning apples frequently.
Remove apples from juice using a slotted spoon and place in an oven safe dish.
In a blender, combine the remaining 1/2 cup apple juice, cornstarch, apple pie spice and sugar.
Blend a few seconds until smooth.
Whisk mixture into hot apple juice in skillet and cook, stirring constantly on medium high heat until it bubbles and becomes thickened and smooth.
Pour thickened mixture over apples and serve.


After reading a bunch of reviews.......I decided to make 2 alterations......

1. I used 1/2 sugar and half Splenda......
2. I added a 1/4 cup(1/2 stick) of butter after introducing the apples back into the sauce let it melt and then stirred long enough to combine.....


I'm not sure if this batch will make it to Thursday's dinner but if not there will be another one right behind it.......
