I try to find a 12-13 lb fresh or frozen turkey. Defrost completely. Rub butter all over the turkey to allow to brown somewhat.
Use a crockpot liner in the crockpot to assist with cleanup.
Salt and pepper the turkey cavity and add an onion and a couple stalks of celery.
Place in the crockpot and cook on high for 4-5 hrs, then low for another 2-3 hours. The turkey will be so tender and moist and almost fall-apart.
Use a bulb to suck out most of the liquid, then use the liner to lift the turkey out of the crockpot.
One year, DH took a torch and browned the turkey to look better. I think it's fine just the way it is and the meat is so much better than cooking in the oven.
I will make the stuffing in another smaller crockpot using the recipe of my grandmother, just make it more liquid so it can cook through. 2 hours is plenty of time.
