The coke or any soft drink, tenderizes the meat, and does something to the enzymes in the meat to make it tender. I work on cars and airplanes, I'm not a scientist hahaha.
Beer also does the same thing. I was born and raised in eastern NC, so I doubt I'll ever do pulled pork like this, I like my family, and don't want to be ousted lol.
If y'all won't tell, I might try it when we're out in the dunes sometime, and see what all our camping friends think about it. Ok, nobody tell now....
I'm "forced" to make my crock pot pulled pork using a vinegar based sauce which I've been told is an Eastern counties of NC version. Understand that the only family member from the American South came from VA so I'm only happy she's no longer with us to see the sacrilege;). Oh right and once I added beer as I ran out of chicken broth. Tasted mighty fine to me.
I do use soda and preserve based glaze for some of my ribs though.
