- SWMOExplorerIt's amazing the number of recipes and preferences in what is a simple dish. As I stated I prefer the simple one, probably because the is what I grew up with, but I'm sure the others are tasty.

4 hard boiled eggs
add to yolks:
2 Tbls. mayo
2 tsp. minced fresh herbs - parsley, chives, tarragon, basil - I like parsley
1-2 tsp. Dijon mustard to taste - we also like yellow mustard
1 tsp. vinegar (any kind)
1/8 tsp. Worcestershire sauce
1/8 tsp. pepper
I also use a stick blender to puree the filling. The two secrets are the Worcestershire sauce and the vinegar. And piping the puree (I just use a zip loc bag with the corner cut). And I love the fresh herbs. It makes it look very appetizing when you have the green parsley mixed into the yellow egg. - BajaLindaExplorer
