Start with about 3 cups of shredded chicken breast meat in a large bowl. Add a stalk of celery (chopped), a few green onions (sliced) and a medium sized apple (chopped). Add a handful of raisins, a handful of grapes (halved) and a small handful of toasted pecans pieces. Toss it all gently together in large bowl.
In a small bowl, mix together 3/4 cup mayo, one teaspoon of curry powder, a healthy squirt of honey and some fresh ground pepper. Add to chicken and mix well. Chill before serving.
Use walnuts instead of pecans, Greek yogurt instead of mayo. Anything goes! We love it stuffed into pitas, over greens as salad, on kaiser rolls or plain old wheat bread, you name it. Delicious! - Old-BiscuitExplorer III
