Double chocolate muffins

Double Chocolate Muffins

Melt in microwave for 2 - 2.5 minutes

3 1oz squares unsweetened baking chocolate, broken up
1 stick butter (4 oz)

Stir and let cool

Mix in
1 c. buttermilk (I use powdered buttermilk mixed with water)
1 egg
1 tsp vanilla extract
1 dash salt
1 c. sugar

Sift in, stir until just blended
2 c. all purpose flour
1 tsp. baking soda

Stir in
1 c. semi-sweet chocolate chips


Bake at 400F in greased or paper-lined muffin pans for 15-20 minutes, until toothpick inserted comes out clean.

Remove from oven and cool for 5 minutes, then remove from pans.
Serve warm or cold.

Yield : 12-15 2.5" muffins. Can also be made in mini or jumbo muffin pans with adjustments for cooking time.
  • Well, you could ice them with chocolate frosting , then sprinkle on some mini-chocolate chips*. Then cut in half, add some vanilla ice cream and cover with hot fudge sauce. Insert (chocolate coma) here.

    I just made a batch last night. Zapping them for 10 seconds in the microwave warms them back up.

    P.S. Does anyone know of a muffin pan that will fit in a 12" dutch oven?

    * I found a donut shop that makes chocolate cake donuts with chocolate icing and mini chocolate chips on top. Good thing it's half an hour away from home.
  • When I put a pizza stone on my bbq, I can bake anything that can be baked in an oven on that set up using conventional bakeware.
