Easter Dinner

Just asking if anyone is camping and cooking Easter Dinner for family and friends? Depending on the weather, we may camp at an Ohio State Park for Easter and have the family in for dinner. Our oven is temperamental and I am asking what you are cooking that does not include the use of an oven. Thanks in advance.

  • Ham in crock pot, new potatoes, green beans, deviled eggs, salad, rolls, butter. This menu appeals to more people.

    For dessert, "make their own" strawberry shortcake. Prep strawberries ahead of time, use angel food cake and cool whip. Put ingredients out on table with paper bowls and plastic spoons and let everyone help themselves.
  • For dessert let the family do old fashioned S'Mores on the campfire. It's a memory and skill every child should experience at least once :w
  • Thanks so much. These are wonderful ideas and I can't wait to read more. While it is snowing today the weather for next weekend looks better so we may be good to go. I really like the ham in the crock pot idea as well as the cauliflower. We will do deviled eggs after the kids have their Easter Egg hunt.

    We use the cast iron dutch oven to cook a ham or leg of lamb with coals on the campfire. If you don't have a d.o., you could always get a pre-cooked ham at a grocery deli and make some sides. Also encourage the family to bring pot luck style dishes. Perhaps you could provide the salads and someone else can bring the baked entrees?

    Family is just glad to be together, they rarely question the gourmet quality or lack thereof of the cooking.
  • I have a large electric roaster. I have used it to cook a ham. last year for Easter, just did chicken on the grill, then fresh green beans cooked quickly in wok. also have done cold ham, cooked ahead in oven at home.
  • Not cooking Easter outdoors or even at all this year. It's my sister's turn and I welcome her to it;).

    However if I was cooking outdoors I'd prolly opt for a grilled boneless leg of lamb marinated in garlic, olive oil, rosemary, lemon and parsley. Or grilled ham steaks with a ground mustard baste if that's your traditional holiday meat. For sure I'd blanch green beans or asparagus or artichoke halves or quarters at home then grill them on site. Maybe boiled new potatoes or made at home mashed that are heated up. As far as the mashed you can also substitute cauliflower for potatoes if you like. You can forgo the potatoes and switch them out for biscuits baked on a CI skillet/heavy pan on a grill.

    Starter? Deviled eggs that are mostly made at home with the boiled egg white halves in one ziploc bag and the seasoned yolk stuffing in another plastic bag. Make a diagonal(or zig zag shaped) cut in the corner of the bag and pipe the yolks into the egg whites. Dust with smoked paprika or minced parsley for "pretty" and another layer of flavour.

    And here's my biggest truth. I like to eat in courses so would prolly take all the spring vegetables and cook them in a chicken broth/stock and serve as a soup. Nice change of pace, less work and less grill space needed.

    For dessert? Lemon curd (jarred version) a top store bought crepes or in angel food shells with best at market berries and a can of real whipped cream.
  • We have done plenty of Easter's and many more Thanksgivings in our RV. We have a regular round crockpot that stays in there, but during holiday trips, I have a large oval that will fit a good size ham or turkey. Cook 6-8 hours on high or 8-10 on low and it is "fall off the bone" good. I always use strips of aluminum foil underneath so I can pick the bird or ham up out of the juices before serving.

    I will use the round crock pot to make green bean casserole or baked potatoes to then do twice baked potatoes with. (put in cp, turn it on high for about 4 hrs and they are good to go).

    I have done a big lasagna in the oval pot. Cook my burger and add ready-made sauce, onions, green peppers and whatever else I want to add. Make sure there is lots of liquid. Put a layer of liquid on the bottom, layer uncooked noodles, then sauce, ricotta cheese, then mozzarella, and continue layering. On the very top, I will add about 3/4 cup of jarred sauce mixed with 3/4 cup of water, then top with cheese. This will allow enough liquid for the noodles to cook. YUMMY and quick. Cook 4-6 hrs on high OUTSIDE (smells up the RV too much). Big Salad and we do some purchased italian bread, cut opened and buttered, on the grill.

    What do you normally have for Easter dinner?
  • Yes, I'm having Easter Dinner for 20 people. I'm seriously thinking of cold sides, paper plates and ham, LOL. My son, daughter in-law and 2 young grandsons are moving in with us for 6 weeks. I really don't mind because there're really terrific kids! The grandsons, well very active and outgoing, LOL Wish me luck!!!!
