SuperDave, I think I would like to cook a brisket just below 250 deg, but I bet that would take 24 hrs or more cook time. I could probably do that with a temp controller.
Do you reckon the charcoal in my Grill Dome would last that long (at that low temp), or do I have to get up in the middle of the night, unassemble, add charcoal, reassemble? My Grill Dome seems to be about as big as a Green Egg, maybe a little bigger. Would the brisket look like a meteorite if I don't wrap it? Wrapping seems to me to take away from the taste.
