Do you reckon the charcoal in my Grill Dome would last that long (at that low temp), or do I have to get up in the middle of the night, unassemble, add charcoal, reassemble? My Grill Dome seems to be about as big as a Green Egg, maybe a little bigger. Would the brisket look like a meteorite if I don't wrap it? Wrapping seems to me to take away from the taste.
I think you are trying too hard. Give it smoke for 4 - 6 hours, wrap it and finish in the oven at 250. It will be wonderful!!
For me, cooking brisket or pork shoulders takes about 1 hour/pound at 250 degrees.
