I have owned a Weber Charcoal Smoker and just made my first brisket an it was awesome. My brisket can rival any bbq joint that Ive had. All true bbq is made with either wood or charcaol and that's part of the flavor profile. You can use wood chips with gas or electric but its missing something.

My 5lb brisket was cooked perfectly in 3hrs. I dry rubbed over night then placed on the smoker. I never basted it but used a varaint of Eastern Carolina sauce.
