I do a 16-17lb brisket in my big charcoal BBQ grill, and in my charcoal smoker. I can do them, in the BBQ grill in about 5-6 hours. Very tender, a large smoke ring, and bring home a first place trophy too. The smoker, about 8 hours, same result. I'm old school, not to mention hard headed when it comes to cooking/smoking, so I'm a die hard charcoal fan. Others means of cooking are just fine, I've been beat by them, but I just can't change. For now any way.
