Fat-Free Half & Half?

The wife brought home a recipe that called for Fat-Free Half & Half.

Really?

I'm confused.

    Dutchmen, I get it now; it's essentially skim milk that has been made to be "thick" by adding carageenan.

    Now that you mention carageenan, it makes sense. When I was a kid out of high school, I worked in a place that made food flavorings, etc. We used a lot of carageenan. It's a natural product that makes things like Chocolate Milk "thick" when you drink it. Used extensively in ice cream too.
  • I though half and half was cream from a Jersey and a Holstein mixed 50/50.

  • Sold at Von’s Markets in SoCal. Isn’t bad for my coffee. Others may sell it too.
