How about simple, but a little time consuming. Smoked Cheese. Using your regular BBQ pit, with a lid, and a tube smoker with pellets. I got white premium cheddar and cut it into lengths as wide as it is thick, bout 1" by 1". Packed the smoker tube with pellets and lit it. Put the cheese on and in a couple of hours you have the best cold smoked cheese you could imagine. In the pic I did cheese, shrimp (with Jack Daniels sauce) and deviled eggs. Got a bit carried away, but they were great, and it was for Christmas.
