Feeding A Large Group

I haven't seen this one before. We have a church campout planned and we do food differently from most (no pot lucks). Each family will plan, buy, prepare and clean up for one meal. The rest of the meals someone else will handle. So, if you had to provide lunch or dinner (we can choose which meal we prefer) for 50 of your closest friends (I'm serious here) what would you fix? We have done spaghetti with salad, beef/chicken fajitas, bbq pulled pork, hot dogs, hamburgers, deli meat/cheese for sandwiches in the past few years. I'm looking for some new ideas. We have a large grill and several RV's (kitchens) we can use. Let's hear what you have done. Thanks for any ideas.
  • crab/shrimp boil w/saugage, potatoes little corns, crawdads if u can get them, turkey, hams and fixens
  • Pouch meals on grill and campfire, skewers/rice, lasagna prepared ahead and heated, sloppy joes and pasta salad with baked beans, hot dogs wrapped in biscuits . . .
  • A bake potatoe bar comes to mind with salads. The bar would include all the fixings you can put on a bake potato such as cheeses, tomatoes, taco meat, green onions, chili, bacon bits, sour creams, and various salsas. It's a big hit and doesn't take alot of work.
  • Do a pig roast.

    You'll need a 100 lb. pig (live weight) to feed 50 people.

    Don't forget the apple.
  • Taco bar? Brown up a whole-lotta ground beef, season it, then provide all sorts of fixins!
