We make "Hole in the Wall" egg sandwiches for our kids. All 4 love them (THAT is a good thing, in my book)
We butter one side of 2 pieces of bread, like starting a grilled cheese. Then put the butter sides together, cut the hole with a shot glass, put into skillet butter side down, then take a pat of butter and drop it in the hole. Crack an egg into the hole and cook about 2 minutes an each side.
Our kids eat them with or without syrup. They are good and they disappear quickly :-)
I love the idea of using a piece of texas toast... going to have to try that.
