I also love me some fried oysters. My favorite way is three bowls - one flour, one of eggs beaten with a little milk, one Panko bread crumbs. Dip them in flour, then in the egg wash, then coat with the bread crumbs, pressing them on as necessary. Let sit on a wire rack til you have them all ready, and cook as the original poster said.
