My Dad, being from Texas, liked Eastern over Western Oysters. This thread got me wondering what the difference is.
Found this:
"What are the main differences between east and west coast oysters?
East Coast tend to be saltier and see less sun. West Coast for the most part are a bit smaller and sweeter. They have a deeper cup from being rolled around a lot.
What factors contribute to the differences in taste?
East Coast oysters are grown sub-tidally with smooth shells. The colder waters slow down the metabolism producing a crisp, sweeter oyster.
West Coast oysters are inter-tidally grown. The rough fluted shells make for plump meat with subtle mineral flavor."
