That's interesting. I've noticed that my Pacific oysters vary from the commercial Pacific oysters that are raised from the same spat. Mine seem to be larger inside the shells, which are cupped more, thicker, and the oysters have a slight tan color. The commercial raised oysters seem to be smaller in a larger flatter shell, and a have a slight gray color. Mine seem to have a more intense flavor which I like better.
Mine are probably more constrained in their grow bags, and feed in a more contained bay with more fresh water intermixing from the Skagit River and a small subsurface stream flowing near my beds. Mine are planted at a -0.5' tide level which keeps them under water most of the time, the water in the bay averages 53F.
Taylor Shellfish has a 65 gallan aquarium that they fill with murky water from their bay. They place one oyster in the aquarium, and in 24 hours the water is clear. They are amazing filter feeders, and do much to help improve water quality in the bay.
