Double ditto; with another vote for healthy coconut oil for this task with the plus that coconut oil is good for high temp frying.
Bacon grease has plenty of flavor in small amounts. Add a tsp of bacon grease to the neutral flavor of coconut oil and you get flavor with a healthy fat.
