Hi Roy, as far as the onions go. I just chopped them up and put them in the skillet maybe a couple of minutes before I put the taters in. Didn't do anything else special to them. That is the way my mom always made fried taters. Mine still didn't come out as good as hers and they probably never will. But that's OK.
