I love olive oil but I just cannot stomach the taste of taters fried in it! I cut my potatoes up in very small pieces put them in the oil or bacon grease before it gets hot. Turn burner on high and get potatoes going for just few minutes, stir to coat with grease, then turn down to medium high, cover and just let them brown naturally. I like some of them crunchy so wait to turn until bottom ones are brown (crunchy). Then stir and do this a couple more times and then I chow down on yummy fried taters.
