Good pepperoni spice.??

I usually get my spices from Conn-Yeager Spice in PA. and am pleased especially with their Salami, Kolbassi etc. spices but not satisfied with the pepperoni spice. It's still good for a snack sausage but not the real pepperoni flavor. Do any of you "sausage stuffers" have a favorite brand? I use 3/4 beef & 1/4 pork in my mix. Thanks for any guidance..

The Spice House is one of my favorites. I was looking for hickory salt and Amazon had it for $22. I found it here for $4. and I've been hooked ever since.

Double ditto on the Spice House. My wife is currently into Indian cuisine because the turmeric and other spices have been found to have quite a few health benefits. She likes to get her spices whole and grind them fresh because the whole spice stays viable longer on the shelf.

By the way, c.i. dutch ovens work fantastic on the campfire for Indian cuisine.:C
  • Try googling pepperoni recipes and find one that looks interesting to you, try it and make adjustments to your taste. If its not what you are looking for try a different recipe, experimenting is part of the fun, results rarely go to waste and in the end you end up with something that is truly your own.
  • I've always been happy with The Sausage Maker in Buffalo NY.
