Sounds good. I will try this for at home. My only RV related concerns would be that you have to keep this stuff refrigerated all the time while traveling and the cost to make it is probably higher than coffee mate. While traveling in the RV I usually just use the powdered coffee creamer. I know it is not as healthy nor tastes as good as your recipe but it's easier to store and economical.
