Homemade Sausage Recipe
We love fresh sausage so we decided to try making our own pork, fennel and sage breakfast sausage. We grew the sage but if you're on the road and can find a local farmers market, any number of fresh herbs would work for this recipe. The key here is that you should make them at least a day in advance so the herbs and spices have a chance to infuse the pork.
Here is the recipe:
Ingredients:
1lb ground pork
6-7 fresh sage leaves finely chopped
5-6 dried basil leaves
Ground pepper
Garlic powder
fennel seeds
Crushed red pepper flakes
1 tsp of kosher salt (1/2 tsp of table salt)
Avocado, Olive Oil or bacon grease
Put you ground pork into a small mixing bowl and add all of your spices according to taste. We didn't measure anything, just be careful with the amount of salt used because that's the only thing that can ruin the flavor of your sausage. If you want to be creative, feel free to add/substitute anything else into the sausage you may have laying around that looks good. Mix this all together for a few minutes with your hands.
Let sit overnight in the fridge and enjoy!
