We purchased an under the counter coffee makes so it's under-the-counter, we have a small toaster that fits in the cupboard and the only other appliance that we have is a Magic Bullet that also fits neatly in the cupboard. I go camping to camp not to cook so I generally make meals ahead of time or if its a long road trip, we use the KISS principle for meals.
