I attempted to smoke just one rack of ribs and I definitely used too much smoke. The ribs were cooked to perfection but WOW the smoke was so strong it made it very hard to try and eat them.
Every time I saw the smoke stop I would add more wood and get it smoking again. I did pretty well controlling the temps at 275 degrees but like I said the smoke flavor was way too strong.
How much smoke should be applied and how do you control it?

I did the same as you when I first got my Weber Smokey Mountain smoker (WSM) and used way too much wood in the mix. I did some reading on a few smoking forums for input. It takes some trial and error, but I prefer a lighter smoke so I don't use that much wood. You'll get it with practice.
