I almost always cook outside because there is not a lot of room in the van! I have done it -- made complex meals in there -- but it is only possible because I know yoga :B.
Last year I had one hotplate and a single-burner propane stove. Now I have bought a really nice (used) two burner propane stove which I look forward to trying out.
I cook on the road the same way I do at home -- big batches, enough for 3 or 4 days at once. I usually do the cooking on a cloudy or rainy day. Cooking and laundry :).
