I still use a made on site chunky seared cherry or grape tomato sauce unless I've some leftover home canned tomatoes on hand. In lieu of the peel and stone (storage space is always tight on my end) I use an Armetale pan and a film of olive oil with Whole Foods whole wheat pizza dough. To roll out the dough I use a chilled heavy can covered in Saran wrap.
Thank you! We've only made sauce from fresh tomatoes a few times, but it can't be beat. When camping we try to go for quick & easy, so we make some concessions on the road.
