I just made the best fast track/easy gumbo

2 cans tomatoes and okra (used Margaret Holmes brand)-- it's tomatoes and okra in a can together.

1/2 to 1 small bag frozen pic sweet chopped seasonings (onion, bell pepper, celery etc)

1 small bag frozen peeled 150 count shrimp (6.99 at my grocery)

1 roux mix-- I'm in Louisiana so this may be easier for me: you can use dry roux mix, a box of "gumbo mix".. I used Mam Papaul's box mix. (It's by the rice aisle).

2 quarts water or broth (I used 1 quart chicken broth, 1 quart water and I used the juice from the tomatoes and okra can).

Dump it all in a pot and cook for 1-2 hours. Alternate high and low and replace water as needed.

Serve over rice.

You could probably substitute chicken for shrimp or even pork or cubed ham.

Shouldn't the Orka go in last?

You're gonna need a bigger pot!

  • I assume the canning process does something to it-- it didn't get slimy like fresh okra. Btw, with fresh the trick is to use a little vinegar while cooking the okra down to prevent sliming-- works for me every time.

And I agree-- nothing beats gumbo while camping!

After eating a few bowls, I think I will add another can of just okra next time in addition to the two cans of okra and tomatoes.

sometimes it get slimy if cooked to long.

gumbo is a great for CAMPING on a cool day..
  • Btw, you can call it "Jennifer's Narcoleptic Gumbo" since I'm getting a 24 hour sleep study in Sunday because they think I have narcolepsy. So I'm looking for fast and easy cheats right now.
  • It's not even quite finished yet and I haven't made the rice and I'm having to swat the kids off of it.

I didn't add any seasonings and it doesn't seem to need any. It's a tad salty from the canned vegetables, so if you are salt sensitive go ahead and substitute as needed.
